create: apricot and sultana rock cakes

Another classic from Mum - adapted due to a poor memory on my part.

1 cup wholemeal self-raising flour
1 cup self-raising flour
1/4 tsp cinnamon
1/3 cup castor sugar
80 gm butter
2/3 cup dried apricots
2/3 cup sultanas
zest of a lime or an orange
1 egg, lightly beaten
3/4 cup milk

Mix flours, cinnamon and sugar.  Chop chilled butter and rub in to flour to resemble breadcrumbs.  Stir in fruit and zest.  Gently stir through combined egg and milk until just combined.

Drop spoonfuls onto baking tray lined with baking paper.  Bake moderate oven, 15 to 20 mins or until golden.
